Mini taco salad

Mini Taco Salad
Ingredents
package of wonton wrappers      1 pound of ground beef
Fat Free cheddar cheese     1 package of taco seasoning
shredded luttice    chopped tomato
taco sauce   light sour cream
chopped onion    other taco toppings

First you will brown your ground beef. You could also use boco meat or ground turkey or ground chicken whateve you want. Then mix in your taco season. (just follow directions on package) Spray muffin pan with pam. Place the wonton wrappers in each cup then spray top with pam. Spoon about 1 spoonfull of taco meat into each cup. Sprinkle with bit o cheese. Bake at 350 degrees for 4-6 minutes till crispy. then top with your individual taco salad toppings. Enjoy!

Turkey zucchini cheddar meatloaf

Turkey Zucchini Cheddar Meatloaf
Ingredents
1 cup grated zucchini         1 cup fat free shredded cheddar
3 TBSP egg whites         1/2 cup onion diced
1/2 cup mushroom dices         3 cloves of garlic minced
bit of s&p       1 pound ground turkey

1 TBSP brown sugar      1 TBSP mustard
2 TBSP Katchup                       

Ok, you will grate your zucchini and keep about a cup. Lay it out on paper towel and place another paper towel on top then smoosh all the liquid out. You of course can use more or less of any ingredent this is just what I threw in the pot. Put zucchini, cheese, egg whites, diced onion, mushrooms, garlic, and s&p in big bowl. Mix well...
You will then add the turkey and mix again. Easier to use your hands so just dig on in there. You will then create 7-8 meatloaf balls and place them in a greased baking dish. In seperate bowl mix the katchup, brown sugar, and mustard. Then spoon on top of each meatloaf. Bake for 45 minutes at 350 degrees. Serve :)

Turkety Quinoa Stuffed Peppers

Ingredents
4 red peppers               1/4 cup dry quinoa
8oz ground turkey         1 cup FF cheddar Cheese
12 tbsp tomato sauce 

Directions
In pot cook 1/4 cup of quinoa with 1/2 cup water. Set aside. Brown 8oz ground turkey. Cut tops off peppers and take out all seeds. Pour 1/4 of quinoa in each pepper, then top with 1/4 of turkey, then 1/4c of cheese and about 3tbsp tomato sauce on top. Bake 325 degrees for 30-35 minutes.

Zucchini lasagna

Ingredents
1 zucchini        1c fat free mozzarella
1 package of ground turkey     1 cup pasta sauce
1/2 cup mushrooms      1/4c shredded parmesan
1 1/2 cup fresh spinach

Directions
Slice zucchini with mandolin slicer. Broil for 2-3 minutes. Brown ground turkey and mushrooms. In baking dish use 1/2 of zucchini on bottom for "lasagnia noodles". Then layer 1/2 of rest of ingredents. Then place rest of zucchini and then rest of ingredents. Bake for about 25-30 minutes at 400 degrees.

Pizza Wrapper


Ingredents
1 Egg Roll Wrapper         4 Turkey Pepperoni
Mozzarella Cheese Stick      1tbsp pizza sauce

Directions
On Egg Roll Wrapper put layer of pizza sauce. Then put Pepperoni. Then the cheese stick. Roll up the wrapper like a egg roll. Wet edges to make stick together. Bake 400 degrees for 10-15 minutes. I know I labeled this as an appetizer or snack but I had 1 for lunch! Just wasnt sure about labeling.

Turkey n Cheese Wrap


Ingredents
1 Egg Roll Wrapper         Slice of Turkey
Mozzarella Cheese Stick      1tbsp pizza sauce

Directions
On Egg Roll Wrapper put layer of pizza sauce. Then put turkey. (I folded up the turkey) then the cheese stick. Roll up the wrapper like a egg roll. Wet edges to make stick together. Bake 400 degrees for 10-15 minutes.

Turkaflower Mac n Cheese

TurkaFlower Mac n Cheese


1 bag of Green Giant Cauliflower with 3 cheese      5oz elbow noodles
10oz ground turkey   1teaspoot onion powder
3 wedges laughing cow light Swiss

This was originally a slow cooker recipe. Supposed to take 4-7 hours but I did on stove in 20-25 minutes. Still tasted fine. In skillet cook 10oz turkey. (no oils in pan) Cook noodles till done in pot while turkey cooks. Drain noodles and pour all ingredients in pot and cook until cauliflower is warm. I nuked it in microwave in bag for 1 min prior. mix well and eat!


Petite lasagna and no noodle lasagnia

Petite Lasagnia
12oz ground turkey   1c chopped onion
1/2c chopped mushroom     14.5oz can tomato sauce
2 cloves minced garlic             1/2 tsp basil
1 1/2 ricotta(part skim)  1 1/2c fat free mozzarella
12 egg roll wrappers (wonton wrappers)

Brown turkey sausage with onion and mushroom. After cooked add tomato sauce. simmer for about 5 minutes.
While your turkey mixture is cooking, place the eggroll wrappers in your muffin pan. Then (evenly) put your cheeses in wrappers.
Add meat mixture on top. Bake at 375 for about 10 minutes. 
Mine got a little overcooked on edges. but they were still yummy!!



No Noodle Lasagnia
I also took the rest of the package of turkey and cooked it up along with the mushrooms/onions and 1/4 c of tomato sauce. put in dish with 1/4c of mozzarella cheese for lunch the next day. 345 calories 48.5g protein 14g fat  6g carbs

Sausage Pin Wheel

1/2 c ricotta cheese   1/2 cup mozzarella cheese
1 tbsp italian seasoning  1 turkey sausage link
4 phyllo dough sheets   5oz frozen spinach(squeezed)
cook sausage link. In blender grind up to make crumble. Mix cheese, seasoning, and spinach in bowl. Spread cheese on 2 layers of phyllo dough. (will have 2 sheets with 2 layers) then top with sausage. roll tightly. spray with pam. bake till crispy. Had some filling left over so threw it in mini bowl and baked.
1/2 roll about 5 mini rolls 145 calories, 4.5g fat, 13g carbs, 10.4g protein

back to basics

Im getting tired of this stall im in. SO, back to basics we go. I havent been eating the best so, that will be the first Ill be fixing. And I am upping my exercising. Been slacking there too. Made a new recipe yesterday. I have always liked those toster scramblers, so I decided to make a healthy version!!  I used 6 sheets of phyllo dough, turkey sausage, egg whites, and fat free cheese. It needs less egg and more cheese, but it is still good!! I only eat 1/2 at a time. there just to big!! For 1 whole one it is 139 calories, 1.9g fat, 20mg cholesterol, 600mg sodium, 10g carbs, 19.9g protein. Not to bad if I say so myself!!

Some recipes I love!!


This one I got from bandedwendy. MY ABSOLUTE FAVORITE!!


This one would be good on a bed of brown rice with some teriaki sauce. That is how the frozen meal thing was, but I edited it around a bit. yummm!

Mushroom Pizza  174.5 Cals  11.1 Protein



Egg White Omlet w/ turkey sausage and FF sprinkle cheddar cheese
118 cals 21.2 protein
Also do goat cheeses instead of cheddar which is 150 cals 16.5 protein

Most the time I only eat 1/2, sometimes more.
